Recipe: Sweet Roast Pork Chops

 Homely and sweet roast pork chops with parsnips and apples

This is a great dish, easy to make and so warming in the winter months. The honey and apples give a sweet flavour to the homely roast pork and parsnips. A great alternative to a Sunday roast this can be on your plate within an hour.

Ingredients:
4 pork chops
3 parsnips
4 apples (ordinary eating apples)
handful of fresh sage
clear honey
olive oil
salt and pepper

Serves 2-4


How to make:

Start by putting a tablespoon or so of olive oil onto the bottom of a deep rimmed baking tray or casserole dish. Add the pork and coat in the oil before adding 2 tablespoons of clear honey over the top and leave the dish to one side.

Next, pre-heat your oven to 220ÂșC before peeling the parsnips and chopping them lengthwise. Cut the apples into segments and place them all in the dish with the pork, drizzle another tablespoon of olive oil over the top and mix it all together. Roughly chop a handful of fresh sage, sprinkle over the top and place the dish in the oven.

Cook for 30 minutes, turning the pork halfway through, and you’re then ready to serve. Place everything onto a serving dish and drizzle some of the juices from the dish over the pork, and you’re ready to serve.

This is a nice, straight forward meal for 2 but by adding a few roast potatoes and some peas, sweetcorn and/or carrots, it can easily stretch to a full on lunch for 4.
