Recipe: Chicken Fajitas

A delicious fajita dish to impress your friends

These fajitas are great for when you have your friends round. It’s quick to make and you can put it all out on the table for people to help themselves. It can easily be bulked out with some extra veg and extra toppings can give more flavour combinations for people to try. This can also work served on a bed of rice or salad

Ingredients:
500g chicken breast
1 onion
1 red pepper
1 green or yellow pepper
1 tablespoon of paprika
pinch of cumin
salt and pepper
olive oil
2 limes

Suggested toppings:
salsa
guacamole
grated cheese (a nice cheddar is works great)
sour cream
refried beans

Makes 6-8 fajitas


How to make:

Start be slicing the chicken breasts into strips and do the same with the onion and peppers. Put the sliced veg and chicken into a large bowl and swirl some olive oil over the top. Next, add the tablespoon of paprika (you can add more if you like an extra kick), cumin and season with salt and pepper.

Mix the contents of the bowl using your hands until the seasoning is equally distributed. Then add the juice of one of your limes, give a last mix around and leave in the fridge to marinade for 20 minutes.

Heat a deep-rimmed frying pan or gridle pan (no need for any more oil) on a medium heat. Once heated transfer the contents of the bowl into the pan and fry, ensuring you turn the chicken regularly. Fry until the chicken is cooked through, this should take around 8-10 minutes.

To serve, heat your tortillas as per their instructions, place the tortillas on the table with pots of your chosen toppings. Using a chopping board to protect the table, bring your sizzling pan to the table, add the juice of the other lime, and let people help themselves.
