Recipe: Pork Teriyaki

Really simple, really quick and really tasty

With barely a handful of ingredients this tasty pork dish can be thrown together in next to no time. Although best if prepared the night before, so long as you leave it for at least an hour to marinade the flavours will come out in the pork fillet.

Ingredients:
400-500g pork fillet
2 tablespoons olive oil
5 tablespoons soy sauce
2 garlic cloves
1 teaspoon of ground ginger
2 teaspoons brown sugar
salt and pepper

Serves 2

How to make:

This is best done in a large freezer bag, but failing that you can use a bowl just the same. First mince the garlic then place it, along with the soy sauce, olive oil, ginger, brown sugar and a teaspoon of pepper into the bag or bowl. Add a pinch of salt and the pork fillets, seal the bag and mix it (this is where the bag is easier as you can just turn it over and over in your hands). Place in the fridge for at least an hour, for best result leave overnight.

Heat your oven to 220°C and coat a baking tray in a thin layer of olive oil. Empty the bag (or bowl) onto the tray and loosely cover with foil. Place in the oven and bake for approximately 40 minutes, until the pork is cooked through.

To serve, the pork can either be left whole or sliced depending on your preference. This is great on a bed of rice and/or salad with the extra sauce being poured over as a dressing.
